CONTRIBUTING TO HEALTHIER DIET AMONG NIGERIANS
Being a stakeholder and someone that had been at the forefront of Street Food Safety advocacy since 5th November, 2014, when I created a Street Food Forum on Facebook group. So I see it as a privileged when I was called upon to be part of the collaborative street food projects with Wageningen University & Research, The Netherlands and Nigerian Institute of Food Science and Technology (NIFST) as a fieldwork enumerator.
The project aimed to contribute to healthier diets among Nigerians by increasing the awareness of consumers to the numerous benefits of consuming more vegetables in their daily meals. It was a great experience and a rewarding exercise as many patrons of these street vended foods key into it at both the baseline and intervention stage and the consumption pattern of green leafy vegetables has greatly increased during the follow up exercise. Learning, data collection and understanding the various factors that influenced consumers choice of a healthy diet is a take home knowledge for me.
